Why control dough temperature? | ||
Accurate control of post mix dough temperature is vitally important for product quality and yield. Optimum temperature control results not only in higher bread volume and weight, but also in better texture, flavour and improvements in crust and crumb structure. Besides the positve effects on product quality, accurate control of dough temperature also leads to improvements in processing such as better time management, better rheological properties of the dough, lower scrap and less downtime. Optimum production requires accuracy, reapeatability and consistency in dough temperature conrol. |

Advantages of ice for dough temperature control | ||
Ice is a cost effective way to produce and store cooling energy and has a large cooling capacity for a given weight or volume, containing many times more cooling capacity than chilled water. |

Ice machine on SmartGate ice store |
Ice machine on BK ice store |
Standalone ice machine |
A simple ice machine and bin solution for bakeries consisting of an ice machine mounted on a SmartGate ice storage unit. A built in level control system automatically switches the ice machine off when the bin is full and back on when ice is removed. The unique 'SmartGate' design guides the ice into the snout to eliminate ice spillage when the ice store door is opened and ensures that the first ice produced is the first ice used, thus eliminating the build up of stale ice which can be a problem with conventional ice bin design. The machine also comes with a Ziegra Triple water filter for improved ice machine hygiene and reliability as standard. A range of ice machine and Smartgate bin capacities to suit small to medium sized bakeries For installation adjacent to the mixer, or centrally if used with carts, manual dosing of ice. |
A simple ice machine and bin solution for bakeries consisting of an ice machine mounted on a BK ice storage unit. A built in level control system automatically switches the ice machine off when the bin is full and back on when ice is removed. The unique design features an elevated bin with cart(s) that slot in underneath. A lever is pulled on the BK and the cart underneath is filled automatically by gravity. The cart can then be wheeled near the mixer ready for use. The machine also comes with a Ziegra water filter for improved ice machine hygiene and reliability as standard. A range of ice machine and BK capacities available to suit small to large applications. For installation in a central location with ice distribution by cart, manual dosing of ice. |
A popular solution for bakeries that usually consists of a large ice machine sat on the floor, filling up the customers own ice bins. This solution is suitable for 16 - 24 hour operations as the ice is used at a constant rate, with no need for storage. The level control system is built into the end of the ice discharge pipe and switches the machine off when the cart is full, re-starting again when the cart is replaced. For installation adjacent to the mixer, or centrally if used to fill carts. Manual dosing of the ice.

SIF system | Ice machine with silo | |
---|---|---|
An SIF system produces StreamIce from freshwater and feeds it by gravity into an SIF storage tank. This insulated tank agitates the ice, keeping the crystals in suspension until the mixer software or operator calls for ice. Once it receives the instruction to deliver ice the pumping system pumps the ice to the mixer and the dosing system accurately controls how much ice is delivered. Once the ice has been delivered a confirmation signal is sent back to the mixer. Click here to watch video |
The ice machine feeds micro chip ice into the insulated ice silo which accumulates the ice until needed. When ice is requested, the automatic extraction auger brings the ice out of the silo into a waiting cart or other container. A dosing system can be added to the silo so that the ice can be weighed in precise quantities and if the silo is placed in the right location, ice can be dosed straight into the mixer. |
